Multi-Use Chicken

On the menu today:

Chicken Filling


One package of precooked, seasoned chicken strips (Ready Cuts in Canada) Use Italian for pasta, Southern Pepper for Fajitas or Quesadillas.  (once you master this, you can switch to uncooked chicken cut into strips and your own seasoning)
1 large white onion, cut into small-ish pieces
1 pound of mushrooms, sliced or chopped.
1/2 of both red and green pepper, sliced
Cayenne, cajun garlic, powdered garlic, oregano, basil, salt, pepper, tabasco, Frank's Red Hot Sauce

Cook onions and mushrooms until onions soft and almost see through.  I use chicken stock to do most of my frying these days, but use whatever you want.  Once the onions are see through, add peppers and spices.  Let cook for a few minutes, then add chicken.  Warm chicken through if using the precooked, cook the chicken if using raw.

Once cooked:
This can be eaten with pasta - just warm up any jarred sauce and put on top of chicken.
This can be used as a quesadilla filling - warm up soft tortillas, place some filling on one half, top with a small amount of shredded cheese, fold other half over and put in oven on 200 or so for 7 minutes or until cheese melts (it doesn't take that long)
This can be used as a fajita filling - place chicken filling in tortilla, add other cold veggies and salsa, sour cream, maybe JSG's guacamole (see tomorrow's entry for instructions) wrap up and eat.
