On The Menu Today

On the Menu Today:

Tinypixie's Porcupine Meatballs

1/2 kilo mince (one pound of ground beef)
2 tablespoons plain flour (all purpose)
Pepper (just a few good turns of the grinder)
1 1/2 teaspoon salt
1 425 mL can of condensed tomato soup
1/2 cup of cooked rice
1 small onion
1 egg

Grate onion, place it and mince and flour, salt and pepper in a bowl.  Add
beaten egg and mix well together. Add rice and mix.
With floured hands, roll mixture into balls and set aside.
Pour can of soup into a deep frying pan, fill the empty soup can with water
twice and put in with the soup.  Mix it together and bring to boil. 
Place meatballs in the frying pan making only 1 layer. 
Turn heat down to a simmer and simmer gently for an hour.
